Chef Carey Hynes
Carey Hynes is the Chef Partner of Sunny’s and ViceVersa in Miami, FL. Hynes brings over a decade of fine dining experience to his restaurants, having worked in some of the most prestigious kitchens around the world, including Momofuku Ko, Per Se, and l'Astrance. Prior to moving to Miami, he was part of the opening team at The Charter Oak, Christopher Kostow’s live-fire restaurant in Napa. In 2018, Hynes teamed up with Will Thompson to open Jaguar Sun, developing a cult following and earning a Michelin Bib Gourmand and a Tales of the Cocktail Best Restaurant Bar finalist nod.
During the pandemic, Hynes and Thompson built a grill in a vacant roofing warehouse in Miami's Little River neighborhood and started grilling steaks under a large banyan tree. The pop-up evolved into a residency that came to be known as Sunny’s Someday Steakhouse and quickly grew into a Miami staple. In 2022, Sunny’s Someday Steakhouse was named one of the “Top 50 Restaurants in the U.S.” by Bon Appétit. When the residency ended in May 2022, the team retained the beloved outdoor space and built a full-fledged indoor restaurant around it, creating Sunny's, which opened in October 2024 to local and national acclaim.
Chef David Fisher
& Chef Serena Chow Fisher
David Fisher began his culinary journey at his family’s diner in upstate New York. He attended culinary school at Johnson & Wales before moving to New York City to work in prestigious kitchens such as Jean-Georges, Aquavit, and Aldea. David met his wife Serena at Pearl & Ash before moving to California, where he cooked at Bird Dog and Sorrel. Known for precise, elegant dishes that offer an element of surprise, he draws inspiration from local produce - a focus he carried to Marlena, the couple’s first restaurant, and to 7 Adams, which secured its first Michelin star after opening in 2023.
Serena Fisher graduated from NYU before honing her skills at the French Culinary Institute and Eleven Madison Park. She became the pastry chef at Pearl & Ash, where she met her husband David. The couple eventually moved to Serena’s hometown in the San Francisco Bay Area, where she worked at Bird Dog and Backhaus. In 2020, they opened Marlena, which earned its first Michelin star in 2021 despite launching during a global pandemic. Serena draws inspiration from favorite childhood memories and nostalgic bodega treats, fueling her innovative approach to desserts as the executive pastry chef at 7 Adams and Jack & Remi.
Chef Doug Psaltis
Psaltis is the co-founder of Eat Well Hospitality and Chef Proprietor of a trio of award-winning Chicago restaurants including Michelin-Guide recognized Andros Taverna, contemporary Greek restaurant serving contemporary Mediterranean food cooked from the soul; highly-acclaimed Basque-inspired Asador Bastian, voted the Best New Restaurant in America 2023 by Esquire, named one of the New York Times 25 Best Restaurants 2024, ranked the #13 Best Steakhouse in the World 2025; and traditional Italian neighborhood trattoria, Mano a Mano.
